820 Spirits in Hampshire was established in 2020 by brothers Jonny & Tom Simpson, combining Jonny's experience in sales and technology with Tom's qualifications in chemical engineering and experience in distilling. 820 distillery is located near the New Forest town of Lymington, alongside the Shallowmead garden centre where many of the gin botanicals are grown, while several other botanicals are locally foraged. The distillery is home to 300L and 350 copper pot stills and a 3L rotary evaporator, as well as a spirits school offering gin making and spiced rum making experiences. After launching the 820 Gin range, the 820 Spirits portfolio soon expanded into rum, and Jonny & Tom are now distilling and ageing whisky on-site. The 820 Spirits name is inspired by the chemical structure of ethane - 8 atoms, 2 of them carbon, and by adding Oxygen (O), ethane becomes ethanol.

"EIGHT TWO O Spirits aims to be an environmentally-friendly spirit using locally sourced botanicals creating the best flavours available. Our range of gins have been created using innovative distillation techniques. We have utilised vacuum distillation at cold temperatures, and botanic steam baskets, allowing for the freshness of certain botanicals to be more present. Specific botanicals have been carefully chosen to compliment the percentage alcohol charge of the still, and the cutting point of the distillation.
