Da Mhile Distillery in Wales were one of the first to focus the flavour profile of a gin on seaweed back in 2014, before Edinburgh Gin brought the concept into the mass market with their Seaside Gin in 2015. The category has continued to grow ever since and is increasingly popular for pairing with seafood dishes.
