About Colonsay Gin - Cait Sith
Colonsay Gin's Cait Sith (pronounced 'Caught Shee') is an Old Tom style gin, launched in 2020. It is the second gin created by Wild Thyme Spirits, founded by Finlay and Eileen Geekie in 2016 when they left their respective jobs as an architect and an HR professional in Oxfordshire to set up their spirits business on the island of Colonsay in the Scottish Hebrides. The 'Cait Sith' is a spectral cat from Celtic Mythology that is said to have roamed the Scottish Highlands and islands, with folklore suggesting that it was a fairy or witch that was able to take the form of a cat. |
The Gin Guide Review
Colonsay Gin's Cait Sith combines the sweetness and character of a classic Old Tom with bold citrus notes of orange and pink grapefruit. A core of classic gin botanicals underpins the spirit, with notes of vanilla and liquorice root adding depth and character and pairing well with the citrus fruitiness. The mouthfeel is moreishly full, rounded and smooth, and a Gin & Tonic, Tom Collins or Martinez make for ideal serving starting points. - Paul Jackson, 2020 |
