Edinburgh Gin Distillery
|
Edinburgh Gin was launched in 2010 by Alex and Jane Nicol, following Alex's career in marketing for drinks businesses such as Glenmorangie and Whyte & Mackay. After 4 years of growing the brand, Alex and Jane sold the business in 2014 to their distributors and bottlers, Ian Macleod Distillers. That year Edinburgh Gin's first distillery was opened at the Rutland Hotel in Edinburgh's west end and was home to two 150L stills. In 2016, Edinburgh Gin opened a second distillery at The Biscuit Factory in Leith, with a 1,000L still to meet growing demand. In 2024, Edinburgh Gin relocated their production and visitor experiences to The Aches Distillery, a state-of-the-art, custom built site in central Edinburgh.

Meet the Makers
"There are just four of us in the production team - I’m the Distillery Manager, overseeing operations and making sure everything we make is of the highest possible quality. I like to make sure the whole team is involved in every step and has a voice in the creative process as well as production. We’ve had some excellent gins come out of our collaborative creative process." - Finlay Nicol, Distillery Manager - Edinburgh Gin
