What did you do before establishing Spirit Notes? We have 25+ years of experience in industry, Stefano in electronics and mechanical products, and Roberto in pharmaceuticals. We have covered different roles, from technical to sales and marketing.
What made you decide to create Spirit Notes, and what's the inspiration behind your gin? Our passion for gin led us to regularly organise dinners with our two families to create to taste new spirits. And it was during one of these evenings that we decided to develop our first gin. We tasted a gin made with saffron and we all didn’t enjoy it. Because Stefano has been producing saffron for many years, he suggested we develop a gin with saffron that suited our tastes. The day after we started to discuss other botanicals and we decided to use blueberry because that’s an ingredient often used in pastry making (which is a passion of Stefano that led him to participate in Season 10 of Bake-Off Italy)! After a year and a half of experiments with the mix of botanicals and different production processes, and many litres of gin, we have achieved our goal and released the recipe for production. What is the meaning and story behind the Spirit Notes brand name? Man and nature, a symbiosis. A fusion of knowledge, traditions and love. Ours is a conviviality project, which talks about the various meanings of the word "spirit" and introduces them into a harmony of "notes". As alchemists, we seek spiritual regeneration. Distillates were born as perfect waters for the inner evolution of man and as medicines. “The spirit that benefits the spirit” is our motto - we live it and we want to promote it. Notes like musical notes and notes from a logbook, which will guide our customers out of the labyrinth of everyday life, freeing your energies like the notes of a snake charmer. Can you tell us more about the distillery you work with? We collaborate with a pharmacist friend who has a long family history behind him in the production of liqueurs; 5 generations and 150+ years of experience. The distillery is located in a beautiful place by the Ledro Lake near Lake Garda. For our gin we use an old copper still which guarantees us a result with a thousand nuances. Every time we taste it, we are surprised to perceive new notes. Our product focuses on a few botanicals so that each of them can be identified. We studied the product for a year and a half because we wanted to obtain something different, something to taste both neat and mixed, and which can be used in the preparation of foods as well. What is your favourite way to drink your gin?

What is your ambition for Spirit Notes in the years to come? This adventure did not begin with a business plan, but with the desire to amaze and excite people. We are currently working with our distilling partner to produce our products, but the ambition is open our own distillery and become recognised worldwide as the “Dolomites Gin”. What's next for you and Spirit Notes - any exciting plans? We are developing new gins and the common thread of all our products will be to have a small number of botanicals that can be easily recognised by everyone, and with which bartenders can experiment with to enhance the different characters of the botanicals.
