What did you do before launching The Falls Distilling?
What made you decide to create and launch your gins? We have always liked Gin. I travelled a lot for my job and I would always bring a bottle home from wherever I went as my 'postcard'. This was also the case when we went on holidays. Prior to retiring, I was asked by a friend what I was going to do when I retired and I said that I had always wanted to make gin. She asked me what was holding me back and I said I didn't have a still. She said 'why not?'. So I bought one that day. This is also a great way for Seaneen and I to work together at something we love. This is a passion project. What is the meaning and story behind your brand name? The Falls Distilling is super important to us. I grew up in the town of Willamette, 2 miles above Willamette falls. I am the 5th generation of my family in this town - it's not that long for the UK but a lot for the Western US! Willamette falls has much more history for the indigenous peoples of this area. I wanted to call it Willamette Falls Distilling but that is a different story... 🙂 Can you tell us more about the distillery you work with and the still used? We contract distill through a local distillery. We use a 2000L dual column still - the first Vendome still in the Pacific Northwest. Can you tell us more about your distillation process? We steep everything like a giant pot of tea prior to the distillation process. We believe this gives us consistency and a spirit that is clean and crisp. What is your ambition for The Falls Distilling in the years to come?
We have three successful gins on the market and have been working on three more. Future release dates TBA. We focus our efforts in creating a spirit that is perfect for a specific cocktail. Our first goal is to be able to drink the spirit neat. What are your favourite ways to drink your gins? Neat. All of our gins are made to be enjoyed neat. I have a belief... if you can drink a spirit neat it will make a great cocktail. If you can't drink it neat, you have to make a cocktail. What's next for you and your The Falls Distilling - any exciting plans? Online retail sales. With all of the recognition we have received over the last year, we need a way to get our product out to the distinguished gin drinkers. You Might Also Like...
