What did you do before establishing Wicstun Distillery? I started out as an Army Officer then moved into corporate sales and marketing. What made you decide to move into distilling spirits? Brewing and Distilling was a lifelong hobby that fired up into a full-time passion. Inspired by the art of the possible and a supportive crew, I just took the plunge What is the meaning behind the Wicstun Distillery name? Wicstun is the ancient Anglo-Saxon name for the area the Distillery is set in, being mentioned in the Doomsday book.
Can you tell us more about your distillery and your still? The family and friends run distillery reflects the personal elements woven into the brand. Each of the stills is a personality and named after those loved ones that supported Wicstun's creation (Wife, son, daughter, Mum, Mum-in-law, two Grannies and a family friend). This gives a great deal of flex for our small batch gins. Can you tell us more about your contract distilling work? We like to work with customers sometimes to create a unique product and flavour. One example would be Pickering Gin, created with the local Community Interest Company. They provide us with locally grown watercress and cucumbers to distil into a wonderfully refreshing and unique gin, that also gives back to projects in the town. What can visitors experience if they visit the distillery for a tour/tasting? We are a small team but welcome both formal tastings and "pop-ins". They will see us as a small working distillery, often in the middle of creating and distilling, bottling or packing our products. They will always get a warm welcome and a chat with me.
What is your ambition for Wicstun Distillery in the years to come?
We would love Wicstun Distillery to continue to grow to be a recognised artisan distillery, continuing to create and co-create to reflect our environment and passions, the people and our purpose. What are your favourite ways to drink your gin/s? We love to mix it up! Our Pickering Gin is best over ice with tonic and a slice of cucumber to highlight the great fresh summery taste. Our Pink Gin is great with Prosecco and topped with frozen berries for a super celebration. And our Aromatic Gin is a very unique flavour and can work really well with either tonic or ginger ale, to marry with its spicier botanicals. Desert Island Gins: Which 3 gins would you take with you and why? I'd pick Bombay Sapphire Gin for sentimental reasons as it was the first gin I ever tried. I love Raasay Gin too (a great place to visit!), and a Hooting Owl Gin as it is from another distillery that started life locally to us. What's next for you and Wicstun Distillery - any exciting plans? Yes, lots!
