What did you do before launching Xin Gin and developing Ahascragh Distillery? I am actually a child psychologist, though I have not worked as this for many years! However, my training has come in handy in this industry! Before we started the distillery, Gareth worked in many countries in the corporate world and I decided to stay at home with the children. What made you decide to move into distilling? When the corporate chapter came to an end and our last child had started university we decided we wanted to do something together. Gareth’s passion for whiskey and mine for gin made it an obvious choice for us.
What is the meaning and story behind your brand name? The meaning of Xin is actually mandarin for “love or feelings “ and I just loved that. Can you tell us more about your distillation process? We use a vapour basket and a copper pot still powered by renewable energy. We use 12 botanicals which is a mix of Asian and Irish. We are one of the few truly sustainable gins on the market. What can visitors experience if they visit the distillery? When visitors come to do a tour in our distillery, they are visiting one of the first working sustainable distilleries in Europe which uses wind, solar and high pressure heat pumps.
What is your ambition for Xin Gin in the years to come?
My ambition for the Xin Gin brand is to have multiple Xin Gin flavours using the same bottle but different colours and different recipes. I am excited to say that we have just launched our 0.0 Xin which is the same beautiful bottle but in blue. What are your favourite ways to drink your gin? I drink my gin with a premium tonic with either pineapple or persimmon as a garnish. What's next for you and Xin Gin - any exciting plans?
