Haven Distillery
Haven Distillery was launched in 2016 by founders Duncan & Alex Fox, who named the distillery after their hometown of Haven in Herefordshire, and created Sly Gin with the name and branding inspired by their surname and the phrase 'as sly as a fox'. When Duncan and Alex retired in 2025, Kim Hutchinson become the owner and Master Distiller, bringing her extensive experience in the gin industry to continue the legacy of Haven Distillery and the Sly Gin brand. Haven Distillery is home to a Rotovap still and a 10L vapour infusion still, producing batches of up to 100 bottles (including using herbs grown in Kim's garden) and with their range including Sy Gin London Dry, Lemon Verbena Gin, and Pink Grapefruit Gin.

Sly Gin London Dry (43% ABV)

  • Botanicals: 13 including juniper, coriander seeds, angeclica root, cassia bark, black pepper, dried lavender, fresh lemon thyme, fresh rosemary, apple mint, bay, dried orange peel, dried grapefruit peel. Base Spirit: Grain.
  • Serving Suggestion: Gin & Tonic with a garnish of Lemon and Rosemary or Lemon Thyme, or in a Martini, Gin Sour, or Bramble.
  • Tasting Notes: Aromas of juniper with herbaceous and spice notes. Classic on the palate with piney juniper and rosemary, lavender and bay. A long finish of pine, herbs and citrus.​

Sly Gin - Lemon Verbena (43% ABV)
  • Featuring homegrown lemon verbena alongside juniper, dried lavender, dried orange and grapefruit peel, and cassia bark. Serve with Mediterranean Tonic and a lemon garnish.

  • Featuring pink grapefruit alongside juniper, fresh lemon peel, dried sweet orange peel, vanilla pods, and black pepper. Serve with a Light Tonic and a grapefruit garnish.

Meet the Maker

"I took over the business in March 2025 and wanted to keep the legacy alive and to keep the distillery and Sly Gin names on. We are a small batch artisan distillery that only produces around 100 bottles per batch. Some of the herbs we add to our gins are grown in our garden in Herefordshire, with no artificial flavourings, additives or sugars added to our Gins - all the flavours come from natural botanicals and we add nothing post distillation." - ​Kim Hutchinson, Owner & Master Distiller
