Heart of Scotland Distillery
Heart of Scotland Distillery was established in Andy Bailey and Gillian Bailey, and is located in Clackmannan in the Scottish heartlands. Inspired by Scotland's history of distilling, and having been foragers for decades, Andy and Gillian launched Heart of Scotland in 2025 with their 150L and 50L stills. Their signature London Dry Gin is made with filtered Ochil Hills water, a pinch of Scottish coastal sea salt, and several foraged botanicals including chamomile and sweet cicely. The Heart of Scotland product range has grown to include a Navy Strength Gin, Pomegranate & Pink Peppercorn Gin, and a range of vodkas, while the distillery is open for tours, tastings, and Gin School experiences with 5L stills. 

Heart of Scotland - London Dry Gin (43% ABV)

  • Botanicals: 11 botanicals including juniper, orris root, coriander seeds, black cardamom, cubebs, pimento, blackthorn sea salt, bay, chamomile, sweet cicely, orange peel. Base Spirit: Grain.
  • Serving Suggestion: Gin & Tonic with a garnish of Lemon Peel (and Blackthorn salt rimmed glasses), or in a Martini.
  • Tasting Notes: Aromas of juniper and bright citrus, with woody herbs and subtle spice. Dry on the palate with earthy and rooty notes, gentle spice and minerality. A finish of lingering juniper and a touch of salinity.
