Founders Alex and Ellen set up In the Welsh Wind Distillery in a renovated cow shed on their family farm. Originally intending to distill their own brand gin, an opportunity to create a custom branded spirit for a local bar set them on a different path and they now produce over 30 gins for 24 different brands and businesses. They moved into their new premises on the West Wales coast road, north of Cardigan, in Spring 2019 where they continue to distill in their copper pot stills Meredith and Afanc. They finally launched their own gin, In the Welsh Wind Signature Style in July 2020.

​The Gin Guide Review

In The Welsh Wind's Signature Style Gin is hearty, characterful and warming. When neat, it is rich and aromatic on the nose with deep orange, piney juniper and dried fruit notes. These notes continue on the palate before an engaging transition of flavour as soft spice builds into wave of fiery ginger and lingering oily citrus notes. With the addition of tonic, aromas of tea emerge and the flavours of piney juniper become more prominent, while the warming, deeply spiced finish still delivers pleasingly when mixed.
