Sixling Gin
Sixling Gin was launched in 2018 by Irish husband and wife team Tom and Nicola Grills, having previously worked in England in hedgefunds and teaching respectively. Upon moving back to Ireland the couple learned to distill and spent 2 years developing the Sixling Gin recipe. The gin is currently distilled in a one-shot process at Great Northern Distillery in Ireland, with the cloudberries being included in a vapour infusion chamber at the top of the still. Cloudberries, which give a delicate, subtly sweet and bramble-link quality when distilled, used to grow widely in Ireland until the 1800s but are now scarcer and more common in Scandinavia. The Sixling Gin name is derived from a combination of the 'sixth sense' and 'inkling' needed to know the perfect time to pick the cloudberries. |
The Gin Guide Review
Sixling Gin is flavoursome, characterful and well-rounded. On the nose the gin is fresh and fragrant with a wealth of juniper and elderflower notes. To taste there is depth of flavour and complexity, with the juniper and elderflower being joined by a subtly sweet and a fruity character and underlying spice. The mouthfeel is smooth and full, before a gentle, lingering finish. Mixing with tonic brings out even more fruity sweetness from the cloudberries and elderflower, and garnishing a Sixling G&T with grapefruit or blackberry adds tartness and acidity to complement and balance this. - Paul Jackson, 2019 |
