The Spirit of Anglesey Gin is all about the Welsh sweet violet. It is instantly prominent on the nose with fragrant and floral aromas reminiscent of Parma Violets. On the palate it is light and delicate with the uplifting floral aromas of violets continuing at the forefront and notes of lemon, lavender and herbaceous thyme. The light and soft finish is floral and thyme lingers alongside a gentle pepperiness. With tonic the juniper, lemon and thyme are elevated to give greater balance with the abundant floral notes, and orange or thyme make for ideal garnish starting points.
