Woodlab Distillery was established in 2018 on the border of County Tyrone and County Armagh. Home to Symphonia Spirits, Woodlab Distillery was founded by Ric Dyer, an organic chemist with a passion for food and drink and sustainability. While developing recipes, Ric analysed the flavour molecules of local and sustainably grown botanicals that could achieve the same flavour profile as imported botanicals, and the Symphonia Spirits gin range is cold distilled in rotary evaporators with botanicals such as Bramley apples and berries to reflect the lush landscape of the Orchard of Ireland.

"The distillery is very different to a normal distillery - think laboratory and white coats rather than copper stills and lots of pipework. We have a rotary evaporator and a microwave still that sit on a benchtop, each has a footprint of a small oven but we can produce around 1,000 litres of gin per day using our process." - Ulrich Dyer, Founder & Distiller
