Woodlab Distillery
Woodlab Distillery was established in 2018 on the border of County Tyrone and County Armagh. Home to Symphonia Spirits, Woodlab Distillery was founded by Ric Dyer, an organic chemist with a passion for food and drink and sustainability. While developing recipes, Ric analysed the flavour molecules of local and sustainably grown botanicals that could achieve the same flavour profile as imported botanicals, and the Symphonia Spirits gin range is cold distilled in rotary evaporators with botanicals such as Bramley apples and berries to reflect the lush landscape of the Orchard of Ireland.

Symphonia Irish Dry Gin (40% ABV)

  • Botanicals: 9 including juniper, coriander seeds, coriander, lemon, rosemary, ginger, dandelion, basil. Base Spirit: Barley.​
  • ​Serving Suggestions: Gin & Tonic with a garnish of Lemon and/or Rosemary, or in a Martini.
  • ​Tasting Notes: Aromas of citrus, herbs and juniper, with coriander and basil notes. On the palate, piney juniper, orange and lemon, with herbaceous basil and earthy notes. A long, lingering finish with spice, basil and coriander.
The Gin Guide Review: As the name suggest, Symphonia Dry Gin is very well composed with harmonised flavours, bass notes and higher notes. The attention to detail that has gone into the flavour analysis and construction is certainly evident in the gin. The palate carries robust juniper, leafy herbaceous characters, citrus and underlying earthiness and spice, which all lead seamlessly into the finish which sees spice developing and the basil and coriander notes lingering to complete the journey. "The distillery is very different to a normal distillery - think laboratory and white coats rather than copper stills and lots of pipework. We have a rotary evaporator and a microwave still that sit on a benchtop, each has a footprint of a small oven but we can produce around 1,000 litres of gin per day using our process." - Ulrich Dyer, Founder & Distiller
