Fallstein Distillery
|
Fallstein Destillerie is a family business which has existed for over 200 years. It is named after the town of Rohrsheim Aue-Fallstein in northern Germany where the distillery is located. Historically focused on small scale production for the local market using wheat and botanicals grown on the family's farm, in 2009 the Fallstein team decided to begin marketing their organic spirits across Germany. Tommy's Gin was subsequently launched and is named after Thomas, the grandson of the distillery's owner. Following 4 days of macerations, the gin is distilled in an Kothe Pot & Column still with the citrus botanicals held in an aroma basket.

Meet the Makers
"A lot of our ingredients come from our own bio-farms. The distillery works based on sustainable principles and using organic ingredients, consequently producing 100% certified organic products. Our distillation process gives us a dry gin, coming from 4 days of macerations and then distillation with an aroma basket that holds all our citruses. We call this process our 'dry and wet' process." - Joel Ferrán, Project Manager
