Sibillini Spirits

Sibillini Spirits was founded in 2021 by friends Andrea, Matteo and Marco from the Apennine Mountain region of central Italy. With a desire to create spirits that represent the Sibillini Mountains National Park and its flora, they developed and launched their gin 'Vettore - Gin dei Sibillini' with Tenute Collesi Distillery in 2021, naming it after Mount Vettore - the highest peak in the Sibillini mountains at 2,476m.

Tasting Notes: Aromas of earthy juniper, minty and citrussy herbal notes, and a hint of florals. Crisp and clean on the palate with juniper, citrus, herbs and apple. Deeper herbacious notes build into the earthy finish with lingering notes of dill and apple.
Serving Suggestion / Garnish: Gin & Tonic with a garnish of Apple or Lime, or in a Negroni or Basil Smash.
The Gin Guide Review: 
While Vettore Gin has a minimalist, monochrome appearance to its bottle, the gin itself carries many dimensions of flavour and is a charming representation of the Sibillini Mountain region. The citrus and almost minty notes from melissa and dill join apple notes for an initially crisp, fresh and clean character that is accompanied by the earthiness of juniper, wormwood, angelica root and coriander seeds to deliver balance, contrasts and a journey of flavour.
