About Wild Fox Distillery
Wild Fox Distillery was established by the Rob and Lizzie Billington, a 4th generation family of farmers who diversified into ‘farm-to-bottle’ gin distilling in 2019. Aiming to embody the heritage of their farm in each bottle, each gin is developed, distilled, bottled and labelled on the farm. The 'Wild Fox' name was inspired Rob and Lizzie's two 'red-headed feral farm kids'. |
Ivy's Signature London Dry Gin
Tasting Notes: Bright, zesty and herbaceous on the nose. Juniper, lemon and lime on the palate, with herbal and earthy character. Warming on the finish with cassia and coriander seeds. Serving Suggestion: Gin & Tonic with a garnish or Lemon or Lime. Review - Ivy's Signature London Dry Gin: Launched in 2019, Ivy's Signature Gin combines a classic core with contemporary countryside character. When neat, the aroma is vibrant with fruity citrus and earthy herbaceous notes. On the palate, juniper is clearly evident alongside sweet citrus and savoury herbaceous notes, leading into citrus spice of coriander seeds and warm, soft cassia spice through the finish. Twelve Bore Gin
Tasting Notes: Bold aromas of orange zest and fresh ginger. Juniper, orange, soft cardamom spice and vanilla on the palate, with warming ginger spice on the finish. Serving Suggestion / Garnish: Gin & Tonic with a ginger and/or orange peel garnish, with Ginger Ale, or in a Negroni. Review - Twelve Bore Gin: Launched in 2020, Twelve Bore Gin is bold and flavoursome with orange and ginger. On the nose, immediate aromas of orange peel and fresh ginger are joined by rich notes of vanilla and cardamom. On the palate there's plentiful orange peel, cardamom and vanilla, with ginger building into a wash of warming heat that fades into soft spice of cinnamon and cassia. When tonic water is added the orange and ginger settle and the vanilla, cassia and cinnamon are elevated, with fresh ginger and orange peel making for an ideal garnish starting point. - Paul Jackson, 2021 |

Meet the Makers
"Lizzie’s career was spent within the dairy industry in new product development, and it was Lizzie’s love for a good Gin that first sparked the idea to put her experience to good use and develop their own ‘Farm to Bottle’ Gin. With a wealth of fruits and botanicals growing in the farm orchard and surrounding hedgerows, it was a no-brainer to put them to good use. In April 2019, with all the trials done and the new distillery housed, Lizzie and Rob were ready to go."
