Willow Tree Gin
Willow Tree Gin was launched in 2017 by Mary Vincent. The gin was originally distilled in a 100 litre iStill on Mary's family farm in Bedfordshire, before moving to a new distillery on a farm in Sandy in 2020. Before distillation, some of the herbs from the botanical recipe are lightly smoked, and to reduce the environmental impact, the water used in the distilling process is recycled in a closed loop twin condenser. The botanicals are composted afterwards and used to fertilise and grow fresh herbs. From the sale of each full size bottle, 50p is also donated to the Forest of Marston Vale towards planting new trees. |
The Gin Guide Review
Willow Tree Gin is flavoursome, well-balanced and charming. Bold juniper and lemon character combine with herbaceous and savoury notes, underpinned by classic gin botanicals, pepper notes, liquorice and elderflower. Traditional and contemporary are brought together as the inspiration from Asian flavours can be detected, without this being dominant in the flavour profile. With smoked botanicals there is a smokey hint in the finish, again impacting subtly and not overpoweringly, along with the expected small kick of a 45.5% gin. The benefit at this ABV is that when mixed it not just holds its flavour but also sees different elements blossom further.
