​Launched in 2019, Winestillery London Dry Gin was the second gin to be created by Winestillery, situated in Gaiole in the Chianti Classico region of Tuscany. The distillery was established by the Chioccioli Altadonna family on their estate and the family is renowned for their vineyards and wines. The gin is distilled with a grape base spirit and Tuscan botanicals in a custom-made 500 litre pot still with a vapour basket. It is then aged for 60 days in oak wine barrels.

Winestillery Old Tom is a characterful interpretation of the historic Old Tom style of gin, with notes of honey sweetness throughout that are brought to the gin through the ageing process in oak barrels. The depth and prominence of spice in this gin makes it distinctive from many Old Toms, giving a pleasing balance with the sweeter notes and complementing the citrus peels. This balance also makes it an Old Tom with numerous cocktail applications, such as in a Martinez, Tom Collins or Bee's Knees, as well as being a sippable option on ice. ​- Paul Jackson, 2020
