JÜST Dill Gin - Review & Tasting Notes
About JÜST Dill Gin
Launched in 2019, JÜST (pronounced Yust) is produced next to Lake Boren in Borensberg, South Sweden. Founder and vodka producer, Rolf Munding, along with two master craftsmen, began experimenting with the iconic Swedish herb Dill, which is commonly used in Swedish cooking recipes. The result was JÜST Dill Gin, a London Dry Gin with Swedish character. In fact, the word 'dill' comes from the old Norse word 'dylla' meaning to soothe or lull.

The Gin Guide Review
From the name and location of the distillery, you hope that JÜST Dill Gin will deliver flavours of dill with a sense of Scandinavia, and it achieves this with aplomb, balance and an enticingly refreshing character too. The presence of the dill is instantly evident but does not overpower on the palate, and the combination of this with the intensely piney juniper certainly transports your mind to Sweden. With notes of lemon and peppery undertones too, it's a gin that makes you wish you had a plate of smoked salmon to enjoy alongside it, and in general it pairs very pleasingly with fish or simply on its own in a G&T with a garnish of lemon, blueberries or orange. - Paul Jackson, 2021 |

Meet the Makers
Founder, Rolf Munding
"Dill isn’t a traditional gin botanical, but in Sweden it’s an iconic herb. Its lemony-sweet flavour and aniseed-like aroma is characteristic of many Swedish dishes and, as we discovered, it makes for a great tasting botanical." |
