Pinnock Distillery
Launched in 2018 by Dan Beckett, a former Lecturer specialising in TV and Film, Pinnock Distillery is named after the Cotswolds cottage where Pinnock Gin was first produced and launched. The distillery was soon moved to Radway Tower at The Castle at Edgehill, a Grade II listed restaurant and B&B overlooking the Edgehill civil war battle ground. The Pinnock Dry Gin recipe features local honey, quince and lavender, and is inspired by a recipe in a book commissioned by Charles I who raised his standard for the Battle of Edgehill on the site where the distillery is now located. In 2022, The Castle Gin School was opened for gin making and gin tasting sessions. 

Pinnock Dry Gin

  • Botanicals: 11 including juniper, Seville orange, quince, lavender, fennel, cubebs, cardamom, honey.

Tasting Notes: Aromas of juniper, lavender and orange. On the palate, juniper, quince and citrus, lavender and herbal sweet fennel. A finish of orange and cassia bark. 
Serving Suggestion / Garnish: Gin & Tonic with a garnish of Orange or Grapefruit, or in a Negroni or Martini.
