Ahascragh Distillery

Ahascragh Distillery is currently in development as the founders, Michelle and Gareth McAllister, oversee the rebuilding and expansion of an historic mill building that was built in the 1800s but had been left derelict for the past 70 years. The distillery will run on renewable energy and will produce Irish whiskey and gin, as well as housing a visitors centre, café and shop. Their debut gin, Xin Gin, features persimmon fruit and is inspired by Michelle and Gareth's time living in Asia and the name 'Xin' means 'heart' in Mandarin.
