The Hope Distillery ​(Estonia)
The Hope Distillery and the Gindome gin range were launched in 2022 by founder and Master Distiller, Steen Lerche-Jensen. While working as a Quality Manager and travelling extensively in Europe for over 25 years, Steen widely explored the gins available in each of his destinations. This inspired him to enrol on a distilling course during the pandemic lockdown and to launch his own distillery and gin brand. The Hope Distillery is now home to a 200L copper still as well the first Gin School in the Baltics.

Gindome Viking Dry Gin (47% ABV)

  • Botanicals: 13 botanicals including juniper, coriander seeds, angelica root, grapefruit, lemon peel, rowan berries, radish, cinnamon, nutmeg, galangal, grains of paradise. Base Spirit: Grain.
  • Serving Suggestion: Gin & Tonic with a garnish of Lemon Peel or Grapefruit, or in a Martini.
  • Tasting Notes: Aromas of juniper, citrus and warm cinnamon spice. Earthy and gentle spiced on the palate with juniper and lemon peel. A warming finish of mixed spiced and lingering grapefruit citrus.

"I bought a 200L copper still and I believe mostly in the traditional processes and making London Dry Gin. I think the handcraft and distiller’s quality come out best through that process. If you start to blend or mix flavours after distillation it will not show your real distilling skills. So I make traditional gin but I will at the same time also call them modern gins.." - Steen Lerche-Jensen, Founder
