Woodlab Distillery
Symphonia Dry Gin was launched in 2018 as the first spirit produced by The Woodlab Distillery, established by Ulrich Dyer in 2016. Ric has a PhD in Organic Chemistry and worked in the pharmaceutical industry for 30 years before deciding to combine his knowledge of science with his passion for food and drink. Staying true to his scientific background, Ric distills each botanical in rotary evaporators and uses microwaves to help extract flavour from the botanicals. Rather than importing botanicals, Ric analysed the flavour molecules of local and sustainably grown botanicals that could achieve the same flavour profile he wanted to achieve.

Symphonia Irish Dry Gin

  • ABV: 40% (Base Spirit: Barley).
  • Botanicals: 9 including juniper, coriander seeds, coriander, lemon, rosemary, ginger, dandelion, basil.
  • Buy: (£35 - £40) direct from Symphonia Gin or via Master of Malt or Amazon.
Tasting Notes: Aromas of citrus, herbs and juniper, with coriander and basil notes. On the palate, piney juniper, orange and lemon, with herbaceous basil and earthy notes. A long, lingering finish with spice, basil and coriander.
Serving Suggestions / Garnish: Gin & Tonic with a garnish of Lemon and/or Rosemary, or in a Martini.
The Gin Guide Review: As the name suggest, Symphonia Dry Gin is very well composed with harmonised flavours, bass notes and higher notes. The attention to detail that has gone into the flavour analysis and construction is certainly evident in the gin. The palate carries robust juniper, leafy herbaceous characters, citrus and underlying earthiness and spice, which all lead seamlessly into the finish which sees spice developing and the basil and coriander notes lingering to complete the journey. "The distillery is very different to a normal distillery - think laboratory and white coats rather than copper stills and lots of pipework. We have a rotary evaporator and a microwave still that sit on a benchtop, each has a footprint of a small oven but we can produce around 1,000 litres of gin per day using our process." - Ulrich Dyer, Founder & Distiller
