In partnership with Fortnum & Mason, Audemus Spirits launches Umami Gin in a beautiful ceramic bottle designed by Reiko Kaneko Innovative spirits brand, Audemus Spirits has announced a limited edition run of their Umami Gin that is presented in a beautiful ceramic bottle designed by Reiko Kaneko, available now exclusively at Fortnum & Mason. Audemus began collaborating with ceramicist Reiko Kaneko in 2016 who has since produced hand-crafted porcelain bottles for their spirit line. Most recently Reiko designed a special World Gin Day bottle for Pink Pepper Gin, and porcelain cups for the launch of Audemus’ new hybrid spirit Fractal 3.0 Blooming. Reiko Kaneko specialises in fine bone china and has been creating bespoke tableware for Heston Blumenthal’s restaurant Fat Duck, as well as working on other restaurant projects including 69 Colebrooke Row and Untitled bars, as well as Paradise Restaurant in Soho and The Connaught. Umami Gin is a savoury spirit that expresses juniper and gin differently through combining modern techniques and traditional methods. Founder and distiller Miko Abouaf commented: Collaborating with someone as creative and talented as Reiko is the jewel of our work and having this latest project on showcase and for sale at Fortnum and Mason attests to the quality of our joint work. Umami Gin is an entirely distinctive spirit, and with this exclusive limited release, we feel customers are offered something special. Umami Gin first arrived in the UK in May following a huge success in France and Australia. It is named after the ‘fifth taste’ and the savoury base flavour comes from hand-picked capers, distilled under vacuum at 45 degrees. This is then combined with an infusion of Parmigiano-Reggiano, Italian parmesan cheese, which is glutamate-rich - the molecule which is responsible for our tongues’ ability to taste umami! The liquid is then combined with bergamot and juniper distillates and the blend is then left to rest in an old cognac barrel for several months, giving it a unique, fresh and lightly savoury quality with an entirely unique flavour profile.
