Norlyk Distillery
​Norlyk Distillery was launched in 2020 by cousins, Claus Norlyk and Jesper Norlyk, who give their name to the distillery and gins. The distillery is located in the centre of Denmark's oldest market town, Tønder, behind the old site of one of the town's most popular pubs, "Zum weissen Schwan" (The White Swan) which inspired the branding. Their flagship gin, Norlyk Classic Gin, was followed by their Apple Gin, Blueberry Gin and Rhubarb Gin, all of which are made in their computerised Genio 500 still.

Norlyk Classic Gin (42% ABV)

  • ​​Botanicals: 3 including juniper, pine twigs, orange peel. Base Spirit: Sugarcane.
  • Serving Suggestion / Garnish: Gin & Tonic with a garnish of Lemon
  • ​Tasting Notes: Aromas of grassy, gently sweet fruity notes and woody pine. Light and clean on the palate with piney juniper and subtly sweet orange. A dry finish with bittersweet orange notes.
The Gin Guide Review: By diverging from the traditional grain base spirit most commonly used to make gin, Norlyk Classic Gin has a distinctive character, almost as a hybrid spirit. The character of the subtly sweet base spirit carries grassy fruit notes on the nose and palate whilst being smooth, full and clean with an almost vanilla-like creaminess too. Delicate juniper, pine and orange citrus notes make up the botanical profile for a light delivery of flavour. With Tonic Water, the flavour profile stays true with light piney notes and also fresher orange notes emerging too. - Paul Jackson, 2022
