Pink Pepper Dry
Pink Pepper Dry was launched in 2019 as a dry variation of Audemus Spirits' original Pink Pepper Gin, without the sweet notes of vanilla and tonka beans. Each botanical is individually distilled at founder Miko Abouaf's house in the centre of Cognac. Unlike the Cognac producers that surround the town who use large copper stills, Audemus Spirits use glass vacuum stills and were originally inspired by the vacuum distillation setup of Sacred Spirits of London. This distillation method allows alcohol to boil at a lower temperature and therefore the process can be more sensitive to delicate botanicals and avoids overheating or stewing them. |

Pink Pepper Dry Gin delivers depth of flavour and a sumptuously smooth character, combining classic dry gin characteristics with layers of contemporary flavour. Juniper and angelica root bring their traditional and earthy characters, while pink peppercorns and soft, warming spice from cardamom are balanced with subtle florals and gentle sweetness from honey on the palate. The finish is where the dry character is most defined as pepperiness and soft spice develop, linger and give warmth. Pink Pepper Gin is well-balanced and deeply flavoursome, making it very much its own gin while still having a pleasing connection with Audemus' original Pink Pepper Gin. - Paul Jackson, 2020 |
