What did you do before establishing Fowey Valley cidery and distillery? I ran a small film company mainly making documentaries. Mention a topic and I’ve probably made a film about it somewhere along the way! What made you decide to launch your distillery, and what's the inspiration behind your gin? I made cider for twenty years for friends and family before stumbling across an old orchard that had been ‘let go’. We brought it back to life and that’s how Fowey Valley cider was born in 2012. Can you tell us more about the distillery and still? I worked with a couple of distilleries over a period of 5 years to learn how to turn our cider into spirits and 3 years ago we bought our first i-still from the makers in Holland. We were keen to make everything from scratch and needed to be able to make our own spirit for the gin Can you tell us more about the distillation process and botanicals? The i-still is state-of-the-art and computer controlled. Once we have refined a recipe on our one hundredth scale mini i-still we can transfer the recipe to its big brother and know that the process will be the same each time What can visitors experience if they visit the distillery for a tour and tasting? We do regular free 1-hour tours to explain how everything is made and then end up in the tasting room to sample our range of drinks. We also offer 2-hour gin making sessions, where we'll help you create your own bespoke gin. Find out more and book online. What has been your favourite story from your time running the cidery and distillery? For some reason we are massive in Scandinavia. Over the summer months we have literally dozens and dozens of people from Finland, Norway, Sweden and Denmark come and visit us. It can turn into a bit of a party...! How would you describe your Foy Gin in 3 words?
Classic, velvet, aromatic. What's your favourite way to drink Foy Gin? Either with a good sparkling mineral water, with Fever-Tree Aromatic Tonic and a squashed blueberry, or in a Gibson martini (only partially because Gibson is my surname!). What's next for you and your distillery - any exciting plans? We are working on a golden sipping rum - made from scratch as always, this time though with Molasses brought in from the Caribbean.
