Sacred Gin - Behind the Scenes
Above The Star pub in Highgate you'll find Sacred Gin's bar and distillery. The team distills and works on the business during the day before serving a stunning cocktail menu in the evenings. While the gin industry has seen a flood of investment and new entrants, some with little story, personality or distilling experience, Sacred are a beacon of authenticity and charm.
Ian skilfully, passionately and proudly mans his distilling equipment that he has himself pieced together and developed into a wonderful science lab of bubbling glass containers and tubing. On the wall alongside the distilling equipment hangs a photograph of it all previously set up in Ian and Hilary's home when they started the business - a precious reminder of the humble beginnings of the brand.
For efficiency and to be able to more flexibly meet demand for Sacred's different products, each botanical is distilled individually and then either blended with the other distillates or stored until needed. During our visit it was the turn of the classic gin botanical orris root. While that was in progress we took the opportunity to look through Ian's museum-like collection of valuable vintage gins and spirits that are also on display in the bar.
Ian and Hilary have been in the craft gin industry longer than most and since the start of the gin revival, and as such they are a fountain of knowledge and experience and have seen the industry grow and evolve. Without huge marketing budgets and flashy campaigns they have grown Sacred Gin organically and authentically, which in the current UK gin industry climate will continue to earn them great support, appreciation and recognition.
