WILD FOX DISTILLERY LAUNCHES UK’S FIRST OAK AGED DARK SPICED GIN Wild Fox Distillery, a farm-to-bottle, independent gin company, is sending sparks flying this Bonfire Night with the launch of the UK’s first oak aged dark spiced gin - It’s A Rum Do - produced on its Lancashire family farm. The lively tipple was born out of a desire to pair the best bits of rum with a good old Wild Fox twist to serve up a gin full of both comforting spice and rich Lancashire spirit. Co-founder Lizzie said: “We hear all the time that the rum market is going to overtake the gin market, so we thought, why not combine the best of both? It’s something different, a little odd even, something that nobody expects…’a rum do’ as us Lancashire folk would say! “We all know rum comes from much further afield than our rural Lancashire homeland; in fact, it’s not even possible to make a pure UK rum...but it is possible to craft a gin in the rum way. “Born and bred right here in the North West, we couldn’t be more thrilled to produce the nation’s very first oak aged dark spiced gin, It’s A Rum Do, which is set to cause a real stir in the market. And there’s no more fitting date to launch this fiery 42% spirit than the fifth of November!” Rum Do is an original juniper forward recipe that will get taste buds dancing with notes of burnt caramel, cinnamon, woody coconut and subtle honey from the dandelion rounded off with a luxurious wave of vanilla. Double distilled, rested then redistilled and vapour infused with an enormity of dandelion heads from their farm - it is a real labour of craft love. Rum Do is aged in small 20L oak barrels which is by no means cost effective nor does it give the best yield, but resting for over a year in oak produces intense woody profiles to the spirit and results in the most glorious russet hue and a mellow mouthfeel. This launch marks the release of cask numbers one, two and three with limited bottles available. Each bottle has been hand labelled, signed and sealed by owners Rob and Lizzie.
