After Barrie and Geraldine Gibson had been making their own cider from their 6 apple trees for over 20 years, they launched Fowey Valley Cidery in 2012 from an orchard in Golant, on the banks of the river Fowey in Cornwall. Having since moved into larger premises in Lostwithiel, the couple began producing spirits from their apples, including a Vodka, Eau de Vie, and their Foy Gin which was launched in 2018. Barrie worked with two other distilleries over a period of 5 years to learn how to turn their cider into spirits, before buying their first i-Still from the makers in the Netherlands, so as to be able to make their own base spirit for their gin. The recipe development for Fowey Valley's spirits starts in their 2-Litre mini i-Still. Once the recipes are refined at this scale , the recipes are transferred to their 500-Litre i-Still. The production of Foy Gin begins with their own 7% ABV alcohol which is distilled to produce a 95% ABV base spirit, before being distilled with 7 botanicals including juniper, lime zest, orange and lemon, and then reduced to 40% ABV for bottling. The distillery offers regular free 1-hour tours to explain how everything is made and you'll then end up in the tasting room to sample the Fowey Valley range of drinks. Two-hour gin making sessions are also available, where we'll create your own bespoke gin on mini copper pot stills.
