What did you do before creating Underground Spirits Gin? And how did you get into gin?
Well I came into distilling from a Medical background. I am an Obstetrician and IVF specialist. I have tried my hand at being a soldier and a sportsman. I love the freedom when creating new things. I love the science in every little detail of the gin making process. I love the history of it and its future. I love the way it makes people feel. This Gin is a from the new world, borrowing heavily off the best traditional London style. It’s more than this. More than tradition. What inspired and made you decide to create Underground Spirits Gin? I live in a beautiful place. It teems with Australian bush life. I wake up to kangaroos on my front lawn - there are far too many of these in Canberra - and I have a pair of nesting Wedge Tail Eagles living on the hill behind my house. Canberra is a made up city. A Capital dreamed to be something the whole nation would grow to be proud of. It’s growing. The name means meeting place. And that’s what people do. Meet chat. Eat. Drink. When I started I wanted to be at the forefront of distilling in Canberra. My goal was to use the environmental elements unique to Canberra and craft one of the best Gins in the world. How did you get from the idea to the finished product? Hard work and lots of testing. I am process-driven so going through the process and the steps involved was all part of the process - although there is a famous batch of extreme pepper gin that did not go down well with the test audience! What's the distillery like and can you tell us about the distillation process? Small, we wanted to start, so we did - that meant making a small space workable. We are proud to be only the third distillery (so far) in Canberra. Our gin production is a bit of a lengthy process but does include the crucial step of the sub-zero, sub-micron filtration process which we have also patented. We also use a process of maceration, vapour infusion and tinctures to add the elements of flavour. How would you describe your gin in 3 words? Just one. Wow! What makes Underground Spirits Gin different? We are unique, a contemporary spin on a London dry gin, and you can taste the difference. What's your favourite way to drink your gin? In good company on a sunny day. With tonic and ice in a long glass. Which gins would you always have on your gin shelf? Poor Toms Fool Strength and Prohibition Gin. What's next for Underground Spirits - any exciting plans? The UK export market has been an amazing plan for us! I’m thrilled to have the product in the UK. I’m not good at sitting still, so there are always plans ahead. I have a small team now, including my sister, so some plans are reigned in.
