It’s a bold claim, but co-founder and distiller Nick calls is his best work yet, and the feedback from those who have tasted it on our tours in recent weeks has been absolutely amazing. It has literally been everyone’s favourite gin.
This takes our core range of gins to five, and will be the last gin we release for a long long time, so we hope you will add it to your Three Wrens collection.
How is it made?
We’ve been secretly growing ‘Bison Grass’ at our Cheshire distillery since spring, and if you pop by, you can now see it overflowing in our wooden planters. We’ve grown it from seed, it is 100% organic and has been carefully tended to from day one by Nick, before being harvested, dried and distilled. We have propagated and re-planted the grass as we go, to ensure 100% self sufficiency going forward.
The grass is vapour infused and distilled with rich Tuscan juniper berries, home-grown apple mint, lemon thyme, fresh lime, grains of paradise and 5 other carefully chosen botanicals. The sweet grass is then macerated in the finished gin for a lengthy period of time, imparting more of its natural flavour, before the finished spirit is filtered and bottled at 41.5% abv.
How Does it Taste?
The gin has aromas of fresh hay and citrus on the nose, it is rich, complex and herbaceous, with a strong backbone of juniper, supported by more subtle notes of vanilla and cinnamon. The finish is full and lingering.
