What did you do before creating Granddad Jack's Distillery and gins?
Before building our distillery Granddad Jacks I had done everything from building trailers to serving coffee but most recently I completed my mechanical apprenticeship and then beer tendered at Black Hops brewery while building the distillery. What made you decide to create the distillery, and what's the inspiration behind your gin? It’s all in the name, Granddad Jack’s was created to honour my Great Grandfather, something my father and I had wanted to do since his passing we just didn’t know what industry would work best but one afternoon chatting over a few G&T’s and Whiskey on the rocks the idea of the distillery was formed and we haven’t looked back. What's the distillery like and can you tell us about the distillation process and/or botanicals? Our distillery is a transformed old warehouse previously used for making surfboards, we when got the building we stripped it back to its bare 4 walls, created a big pitched roof and new interior using recycled materials from the local area. We currently have a 1200L combination still allowing us to create whatever we want. Our Gins are infused both by maceration and vapour infusion. We like to create simple, effective and delicious gins using great quality organic Juniper from Bosnia and a mix of native Australian and foreign botanicals. What can people expect and experience if they visit the distillery for a tour/tasting? Everyone that comes into our tasting room gets a Gin and Tonic on arrival that they can enjoy while wandering the distillery with us talking about old family photos and what’s gone into the journey and creation of our distillery, when we make it to our production area all tour takers learn exactly how we create our products, they get to try them straight and also as something a lil special, we add a taste of our limited release for that month to the end of the tour usually these fare limited to a batch of 30 – 100 Bottles. What have been the biggest challenges/achievements, or your favourite story so far? So far Granddad Jack's is the fastest distillery ever to open in Australia in just 8 months so as I'm sure most people can imagine that’s a huge hurdle never mind it being a completely new industry to my father and I. We have be fortunate enough to pick up multiple awards for our Gins and create a great local community around our distillery also. How would you describe your gin/s in 3 words? Simple, Effective, Delicious What's your favourite way to drink your gins? I always love a classic G&T however being winter recently in Australia and experimenting with warmer drinks I’ve fallen in love with the Mulled Gin and tonic too and who doesn’t like the classic Negroni and Dry Martini. What gins would you always have on your gin shelf (other than your own of course!) I’m a big fan of other Australian distilleries like Nonesuch, Seppetlsfield Road, Wandering distillery so I try to keep those ones stocked up however I often try to add new things to the shelf while going back to some favourites like the The Botanist Gin and Four Pillars Gin. What's next for Granddad Jack's - any exciting plans? Always! We have made a commitment for at least the next 12 months to release a small batch of something special each month out of our tasting room so I’m sure there will be some interesting concoctions made in the pursuit of that 😊 Also Read...
