About Ellis No.3 Butterfly Pea Gin
Launched in 2018 after 18 months of product development, Ellis Butterfly Pea Gin is named after founder Carol Jackson's daughter. The gin is distilled in a 50L copper still at Illicit Distillery in Glasgow and is bottled, labelled and numbered by hand. Butterfly pea is a plant which is native to tropical, equatorial Asia, and is often used in Asian cooking and teas. Its flowers give Ellis Butterfly Pea Gin its blue colour which turns lilac when tonic is added. |

Ellis Butterfly Pea Gin is immediately eye-catching with its bold blue colouring from the Butterfly Pea. On the nose and palate it is definitively floral with juniper, sweet citrus and classic gin botanicals alongside. There's depth of flavour and a relatively light, smooth mouthfeel, and in the finish pepperiness and spice develops.
